From Anu’s Faded Notebook Recipes

Akbari Bhawan Baigan and Mirch ( Brinjal And Jalapeno Chilly).

It’s one of the heritage recipes of Eastern Uttar Pradesh and extremely tasty Bharwan Baigan and chillies. The ingredients are simple but flavourful. Best part, it goes well with Roti, Poori or Rice. The Cook time for this amazing dish is under 15 minutes.  That’s quick isn’t it? Here we go.

Ingredients:

Akbari Bharwan Baigan and Chillies

250gms Small brinjals

100 gms Jalapeno (Big) green Chilly

Mustard oil

Salt

Heeng (Asafoetida)

Turmeric powder

Chilly powder

Garam Masala

Coriander Powder

Sonth Powder

Amchoor (Dry Mango Powder)

Yellow Chilly powder

Sesame seeds.

  1. Slit open Baigan (Brinjals) and chillies. Keep aside.
  2. Mix all spices in two teaspoons of mustard oil.
  3. Fill this masala paste in Brinjals and Chillies.
  4. Heat 2 teaspoon mustard oil in a pan, add Cumin (jeera),heeng (asafoetida), Saunf (Fennel) and Cinnamon stick, bring to a splutter
  5. Add brinjals and chillies one by one. Add 3 spoons curd and half cup water, mix, stir in between.
  6. Let cook for 7-8 minutes.
  7. Take out in a serving dish , garnish with lemon, garlic and sesame seeds.
